Fruit-on-the-Bottom Cake
Ingredients:
2 cups flour
2 cups sugar
3 teaspoons baking powder
1/2 teaspoon salt
2/3 cup canola oil
2/3 cup fat-free vanilla yogurt
1 1/3 cups fat-free milk
4 cups chopped and peeled fruit (e.g., raspberries, mandarin oranges, mangos, kiwi, and blueberries)
1/4 cup sugar
Instructions:
1. Put your oven rack on the highest rack. Preheat oven to 350 degrees. Spray a pan with cooking spray.
2. Mix flour, 2 cups sugar, baking powder and salt. Stir in milk. Mix in oil and yogurt. Pour the batter into the prepared pan. Top the batter with the chopped fruit. Sprinkle 1/4 cup sugar over the fruit.
3. Bake 50-60 minutes or until brown.
